Roasted Veggies



Nearly any veggie can be roasted but typically the ones that work best have a lower moisture content ( like sweet potatoes, carrots and broccoli shown here)


A lower moisture content helps them develop a perfectly browned and caramelized exterior.


HOW TO:
Chop your veggies and place on a sheet pan.
Drizzle with EVOO 
Season to your preference ( I love a simple salt and pepper)
Heat oven to 400
Roast for 40 minutes 
ENJOY

I love roasting veggies in bulk because they are simple to reheat and hold flavor better then a steamed veggie.
